Assuming they‘re operational they will almost certainly see occasional use for on track plant during possessions.
Yes, used it a couple of weeks back. Trains can only leave the down platform ECS (empty coaching stock) in the up direction as there are no monitors at the London end of the down platform.

Train will normally go into service at Clock House.

Have seen them used when Elmers End-Hayes was shut, albeit with the weird quirk that southbound trains terminated at Elmers End but northbound trains started from Clock House, with a northbound ECS between the two

On Friday just gone following an incident at London Bridge, 2V11 08:27 London Cannon Street to Hayes (Kent) arrived 38 minutes late at Elmers End at 09:30 and terminated, restarting from Clock House as 2K21, 12 minutes late at 09:38 returning to London Cannon Street.

I guess the crossover isn't signalled for passenger use if trains have to go ECS to Clock House?

Unless during planned use South Eastern deploy extra staff to give the driver the 'close doors/right away' signals due to no DOO monitors (or they use the 707s which have cameras)

It is definitely signalled for passenger use as seen above, there must have been some other reason on Friday.

The crossover is fully signalled with a Main Aspect as opposed to a shunt signal.
And similarly the next day 2V13 0857 London Cannon Street to Hayes (Kent) terminated and formed 2K23 0954 Elmers End to London Cannon Street.

There’s no monitors at the London end of the platform, so a Driver cannot see themselves away as Southeastern don’t use “Lookback” as a dispatch method for Driver Only Operated trains.

The train would have to be manually locked up and worked ECS to Clock House to resume the up working, or if staff are available, Dispatched by Bat and Flag by the Driver’s window. That would apply to Networkers or 376s, I don’t know whether it would apply to 707s with their own cameras.
