Is there any kind of website that provides an overview of railtours operating in Germany?

The equivalent of something like http://www.railtourinfo.co.uk/tours.html?

Alternatively, any tips for sources of info, or the websites of the principal railtour operators there?

I'm interested in railtours aimed at enthusiasts really, rather than those more for the sightseeing market, although I'd still be interested in those if they weren't premium-priced things and used older or interesting stock.

Several, up to dozens. Can you read/understand enough of german? Dr. G´s translate service will not always work properly.
For me I would start with the equiv of this forum: DSO= drehscheibe-online.de (it is also still a printed magazine).
It has just as this forum various subforums and one is dedicated to special trips/workings and the like.
As Germany has a history of local/regional ´provincial´ attitude, also in this respect, there is no nation-wide thing, but of course yet another community/society uniting these in some aspects: DGEG (transl; german society for railway history).
many of the local historic railways running with volunteers on weekends on abandoned lines will also a few times/year organise some longer outing for their members on the lines of daddy DB.
In Mónchen-Gladbach (some 30 KM west of Dusseldorf-halfway to border with NL/Venlo) are always dozens of older wagons in various state of repair of Centralbahn, these will also be used every now and then for such outings. Being dutch myself I pass there fairly often and see that.

I can understand German ok yes.

Have already been looking on drehscheibe - unfortunately they don't have a tidy summary of events, so I guess one just has to look through threads. I might try asking the question on there though.

Don't use the Forums, this is what you need:
https://www.drehscheibe-online.de/ds_redaktion/ds_termine.php
It does include a lot of model stuff and enthusiast holidays etc. You can search geographically but the general search is less good.
