List of stations with one track but platforms either side

Gatwick Airport Shuttle Transit, if you define the North Terminal and South Terminal as "stations"...
2 platforms for each of the 2 trains at each of the 2 stations.
Fully automated as well... No issues with closing doors on people with trolleys of luggage.

And while on the subject of non-mainline, Metrolink has a line with platforms both sides at Manchester Victoria, but I think they are not opened simultaneously.
They are, as far as I recall. The central platform is usually used to turn around trams to/from from the Airport. I think the doors were released on both sides simultaneously last time I travelled that way.
Indeed they are, I passed through an airport bound tram the other day to save me walking down and around.

The track at Templecombe is on the up formation next to the original up platform. A few years ago the old down platform was extended out over the empty down formation creating a new platform. The train now has a platform either side. Only the new platform is used.
Which IMO was a very short-sighted move making further redoubling difficult. Also IIRC one of the first services to call at the station after the new platform opened failed to allow passengers on, because the driver forgot about the change and opened the wrong doors.

It looks easy enough to remove and the guards operate the doors on 159s.

Geoff's latest End of the Line video features Stratford and he includes the Central Line opening both sides and he walks through a train.

Norwood Junction has one - I think it's platforms 1&2 - the track nearest the street exit, anyway.
By the time all the slam door Southern trains had been withdrawn in 2005, services were only advertised on platform 1 at Norwood Junction with the doors only being released on that side.

Here is Julie Berry at Norwood Junction announcing a Thameslink service to Luton on platforms 1 and 2 on 1st September 1989:
