Is there any specific policy around vomiting on trains?

Mrs Broucek was on a bus a day or two ago. A passanger hurled and the whole bus was taken out of service. (Thankfully in London so there was only a 10 minute wait.)

Of course all this talk of "locking out" coaches, is not that easy on walkthrough stock like 700s or 345s. Although there is still little appetite to cause a full cancellation for some vomit, especially end of night when it's likely to end up shortly at somewhere to be cleaned.
