If you have eg. a 7am flight from Stansted, can you use an outbound day of Interrail on the day before? eg going from Bristol to a Stansted hotel?

Yes, you can do that, but you might be better off buying a normal train ticket for the journey rather than "wasting" an Interrail day. All depends on what you're planning to do
