I need an old timetable to prove my claim

Does anyone have the Luton Airport Parkway (starting from Bedford?) to London St Pancras timetable, as advertised on 20th December 2017? I bought tickets based on information on the NRE timetable, but the last few trains on Saturday 30th December were cancelled.

You might not need an actual timetable. If you contact the admins of a realtime tracking site (e.g. feedback@realtimetrains.co.uk) they may well be able to pull the schedule and any cancellation data.

Open Train Times is still showing what happened on 30th December.

I think the suggestion is that the proposed timetable changed between the 20th and 30th, so that the trains would have been removed from the timetable rather than cancelled.

Not really if you didn't take a screenshot or book an itinerary.
