Until TPE re-route via Victoria this will always be a difficult route to timetable, with a mix of fast and slow trains and several flat junctions to think about. So to some extent passenger convenience will indeed have to make way for operational feasibility. Having said that, I would guess most of the demand is for Piccadilly anyway, and in the other direction Hyde is probably a more natural destination than Glossop is.
Glossop is a bigger town than Hyde... far nicer town than Hyde as well.
There is the station that serves the very large area of Manchester overspill housing at Hattersley with a fast electric service to Manchester situated on the Glossop line.
The station of Newton for Hyde on the Glossop line serves that part of Hyde that is often overlooked,
Glossop is slightly different as it is further and rail is likely to be the fastest and most convenient public transport option.
Also it has a large catchment area stretching into the Peak District (albeit most of that is very sparsely-populated).

I think it would be quite limited to be fair. People in Hayfield/Little Hayfield may prefer to use New Mills which is nearer to the former at least.
Have you recently travelled from Little Hayfield to New Mills? It is not exactly what I would call "near" going via Hayfield, Birch Vale and Low Leighton.
I tend to visit Hayfield from time to time when walking and have found the 61 to Glossop only takes about 15 mins. I would have thought getting the train from Glossop rather than New Mills would be preferable as the fares from Glossop would be much cheaper.

No insult to the people of either town, but I can't imagine either Hyde or Glossop attracting many regular shoppers from Gorton, but maybe some Gorton residents work in Hyde.
Gorton probably lost many potential passengers when many nearby rows of terraced housing were demolished some years ago.
