There are plenty of places with unused/under-used station space. I've often thought that a little Café at, say, Leicester could do roaring trade. Especially if there was agreement with RG to distribute the food along the train.

People do live brands sadly, and will always seem to be happy with overpriced mediocre.

Id love to see pop up catering be given opportunities in these places that are empty.
Different styles of home cooked food every 6 months or so. Even at Euston you look round and see the same names producing the same processed food....

For catering at stations, it's more a case of 'extract as much profit as possible after paying the rent'. Network Rail doesn't particularly care whether you trade as Starbucks, Costa, or Bob's Coffee and Cakes, provided the rent comes in on time.

And in this case, 'you' probably means SSP. An awful lot of the 'competing' outlets in stations actually turn out to be them wearing different hats.
