How much of London and the wider south east is only a single change away from OOC?
How likely is / how advanced are plans for a West London line station at Old Oak Common (although I think Willesden Junction's less than a fifteen minutes' walk away)? That would add Woking, Haslemere, Portsmouth, Chichester etc. to that list via Clapham Junction, instead of the Northern or Victoria lines being the only one-change route to HS2.

Nope. Very different propositions. Crossrail 2 has the space safeguarded, and the station as designed - very expertly to fit into a the only available space - could not have been used by a high speed service (physically).

But the EL doesn‘t just run between OOC and Paddington. What happens when those OOC starters arrive at Bond St?

Montparnasse / Massy TGV
Frankfurt Hbf / Flughafen
Barcelona Sants / La Sagrera (opening soon)
Various examples in China and Japan
Berlin has three stations on the north - south line. It means that no trains terminate in Berlin Hbf so it can be a through station. Much more sensible to do the turnarounds at a surface level station on the edge of the city. Berlin Hbf has 8 platforms on the north south line in the basement and 6 platforms on the E/W Stadtbahnline on the roof.

Obviously DB had the advantage of having sterile ground around the Berlin Wall to run the new North South line through post reunification. And a more strategic solution for central London would have cost a lot more.

This TfL mayoral answer suggests there is no funding yet for any new stations on the Mildmay line, but coupled with the local plan below suggests the only thing likely in the next 10 years is Old Oak Common Lane, which would connect Richmond but not Clapham

The adopted local plan is here:

I think the best you can hope for in the next decade is that Old Oak Lane gets built, which then provides a quick connection up to Willesden before doubling back South towards Clapham.
To make a station closer to OOC viable, it needs a lot of redevelopment to improve access, which probably includes moving Elizabeth Line depot elsewhere

Hythe Road was to be the station for the WLL down to Clapham, but that area of land is owned by Cargiant and there's been some problems getting the land for redevelopment.

Early images showed a new line running where the north pole depot is now, with additional development alongside and a very tight curve to join the Overground lines to the west of the station.
