Northern generally can vary as a lot of their DMUs can operate interchangeably, and with such a wide network, it will be a long post to say what can/does operate each route and I could list 100s of permutations of routes and traction. If you let us know what routes specifically, it will help a lot.
Scotrail is a bit more nuanced though, but I'll leave that to the experts of Scotrail.

Ah, sorry - I didn’t realise that it was so complicated for Northern! I am mostly interested in seeing if I can catch Classes 323, 333, and 769 before they are gone, from Manchester (Piccadilly) to somewhere, or if I will have to travel more extensively to somewhere else to be able to experience them. Class 331s and 195s could be interesting, too. I’ve been on Sprinters before, but my only experience of CAF was one stop on a Class 397 from Piccadilly to Oxford Road. I am used to East Anglia, which is quite simple in terms of which classes you find on which routes. Thank you very much!

You won’t see 333s in Manchester you’ll need to head over to Leeds to catch them. They work to Bradford Forster Square/Ilkely/Skipton and Doncaster

On Glasgow Central - Gourock/Wemyss Bay you're highly likely to get a 385, 320 or 318 these days.

Worth noting Manchester-Hazel Grove services are mainly 150s, not 323s but I think there is a booked 323 in the evening. A Sprinter may also be used on an Alderley Edge service in an emergency, but never on a Glossop or Stoke.

This is sometimes a 150 unfortunately. At least some of the /2s are headed to the North West so there are at least some rather than no seats aligned to the windows, albeit with legroom suitable for children only.
You very rarely see a 158 on Lancashire Triangle services (Ormskirk, Preston, Colne) and on the Southports but not often. 156 seems most common these days, or sometimes a 150 and 156 together, occasionally a lone 150. Same with Headbolt Lane though I never saw a 158 on that.
Some might think the random 150 and 156 pairings is genuinely random but supposedly there are a few routes where this pairing maximises capacity against platform lengths.

If they're free and no wheelchair passengers board, the 2 pairs of seats near the toilet are great for legroom and views on any 150. The single seats alongside the toilet not so much though.

Other services around Doncaster.
Hull - Doncaster, usually 158s, although a 150 may be used
Scunthorpe - Doncaster 150 only
Doncaster - Leeds 333, although a 3 car 331 may turn up.

Ah indeed it is, looks like the evening service has been 150s all but 1 time last month (with the morning service only being 156s).

Sadly 158s have stopped appearing on the "Lancashire Triangle" services for a few years.
Come to think of it, I'm quite certain 158s are no longer booked to work anything through Preston these days.

Yes, the only regular 158 workings into Lancashire nowadays are the Leeds-Lancaster-Morecambes....if you don't count Wigan as being in Lancashire, which it was historically.
