Chefs that serve fish with head and tail intact ! why ? I'm not going to eat the top and tail and the thought of those cold reproachful eyes staring blankly up at me puts me right off ! ditto carrots served with the top end ,only going to end up the bin and not suitable for composting ,just don't get it !

Maybe it's to help some people to realise where their food comes from, - makes a change from burgers and fish fingers.

Company canteen served grilled trout, with heads on, complaints about eyes.
Next time, no heads, complaints it made the fish tricky to eat.
Next time, heads on, under a layer of watercress, everybody happy.
