If you want to know what seats are available on a particular train, do a dummy booking on the Cross Country site and you'll be able to see a seating plan showing which seats are free. If you note down the seat you want, I believe a ticket office can reserve a specific coach and seat number (York...

That sounds very different to my experience of that train last year! ABD - EDB was the same, but there was a crew change at Edinburgh and Newcastle, each crew constantly offering more drinks, but not more food as they said the Aberdeen - Edinburgh crew hadn't ordered more food to be put on, so...

That usually means that the train is full of normal reservations. On peak time XC services this is entirely possible - the 07:43 from York was often full (or at least became full at Leeds), one day there were only 2 seat left on the train when I booked the night before.
