It's a 4 day week with a long weekend every 3rd weekend and Sundays are classed as outside the week and are completely voluntary so if you don't want to work any Sundays at all or work basically all of them it's entirely your choice

That's correct so it's reading dials to find the correct order of the fault finding (on that test you are allowed to keep the notes you make before starting which I found massively helped me remember the correct sequence to solve it to get the answer).
Any payslip that has it on is fine and a few people in my group showed their NI number through the HMRC app and the administrator was happy to accept it via that way as well.

Sat stage 1 OPC for West Midlands a couple of weeks ago myself and was confirmed on the day by the test administrator that it is a very recent removal by the TOC hence why they still included it in the practice material that was sent out!
I sat stage 1 myself a couple of weeks ago and they said to us on the day that the Driver Fault Finding Test has now been taken out of the testing so I wouldn't worry about learning how that test works if I was you.
