I have effectively done that: phoned in an order as I was approaching Upper Tyndrum, walked down to collect and then on to Tyndrum Lower to pick up my train to Oban!
The buffet at Crianlarich used to do advance orders which would be handed over during your stop. Obviously most trains join or split there, giving enough time for the transaction!

It would appear that the southbound Lowlander was sent to Edinburgh, offloaded and then the stock used to form the northbound Highlander portions, presumably to ensure stock is available tonight.
Not a track limit per se, however the speed for hump shunting, certainly at Tinsley, was 1.3mph to ensure that one cut cleared the points before gravity took hold on the next wagon, without the need to stop pushing.

It is a legal requirement (in the UK) to have a minimum 30 minute (meal) break after 6 hours. The law doesn't stipulate that this has to align with meal times, and those working part time may not exceed 6 hours in a shift.
